Who doesn’t love a good cookie on a rainy day?
I honestly think that no one raised his/her hand right now, because its something we all do love and why even resist that?
Cookie art seems simple: cream butter with sugar, add eggs, flour, chocolate chips and some toppings, bake it for 10 minutes and you have that perfect cookie.
I wish it was that simple.
I still cannot sleep after seeing these masterpieces thoroughly developed and created by one of my favourite french pastry chefs, the best pastry chef of 2018 Cedric Grolet, which are more than cookies, they are literally art:

Complex and seductive – this is how I would describe those cuties.
I wish I even had a chance to try them, as the flavours seem to be extraordinary: mango, orange and jasmine tea, pistachio as well as classy peanut butter and chocolate chip cookies.
If you think about it, even the simplest recipe requires good technique, care and patience.
When I say simple recipes, I mean classic cookie recipes.
Chocolate-chip.
Ginger cookies.
Maybe some others I cannot recall.
This post is about different cookies.
About those cookies that stand out of the crowd.
That are not made of actual flour, do not contain sugar or dairy.

Amazing! Seriously! No flour, no refined sugar! Made of pure almond butter and coconut sugar…chewy and nutty, just as I love it.
I was in search for flourless cookies and these captured my attention, so I never regretted trying them out.
Besides, Natalie from Tastes Lovely did an amazing job to capture those tasty delights and I enjoyed, enjoyed the recipe in general.
#2. Cashew Chocolate Chip Cookies

You might think that the only difference between these and the first ones is the nut choice.
No.
They are completely different and that is the whole point of this post.
Among all the nut types, cashews are my favourite.
Those who know me well, know, that getting me a bag of roasted cashews would be the best present on Earth.
That´s how much I love them.
Seriously, so many ways to cook wish cashews: cashew creams, cashew mousses, cashew as topping or granola base, cashews with chicken or even with fish.
These cookies are a cool find for such cashew fans as me. Sugar free, gluten-free, dairy free – that´s why I like them even more.

This is my go-to blog, when I need inspiration, because the variety of recipes will astonish you… I don´t even know if it is possible to count, but I can never decide what to cook when I am there.
These vegan cookies remind me of a dark winter evening warmed up with a smell of ginger and nutmeg, cozy socks and a big warm pullover.
I am personally a big fan of ginger. In winter, fresh ginger tea is my number one drink at home. These chewy and moist cookies combine all of the beauty of winter time and…. Christmas, right. You have guessed that right.
I love the amount of spices Rachel suggests to add – they make these cookies less conventional, so do not hesitate to do that too!

First I have encountered Arman´s desserts on Instagram and immediately fell in love with his photos, later with his recipes.

Absolutely sweet presentation as well as unconventional paleo oriented and vegan solutions for real appreciators of whole natural food.
These cookies is my go-to in summer time as well as when I am not in the mood for baking.
Super easy to make and taste just like pure coconut; Bounty bar if you like.
#5. Fig&Tahini Chocolate Cookies

Another super delicious raw edition of a cookie…they look like chocolate shortbread cookies with caramel, but are actually made of whole natural ingredients.. Tahini and fig is a divine-like combination.
If you have a silky sesame paste and few dried figs in the fridge – do not hesitate to make these sandwich cookies.
I am right now in the country, where they grow figs and it´s a season, as well as produce best tahini in the world – is that a destiny, Gaspar?
