They say there are only few basic needs out there: air, water, food, sex..maybe something else, but..
Food is air. Food is water. Food is sex. Maybe, food is something else as well..
Food is something each of us understands on a very basic level, using only our senses, only the smell, the touch, the hearing, the vision and the taste..
There is no rocket science about taste. It is simple.
Even when it is complicated, it is simple.
Even when it is molecular almond spaghetti spiced with unicorn dust and sprinkled with balsamic caviar, it is simple.
To understand it you have to only turn on your senses. Your five senses.
You do not need to think. Compare. Reflect. React.
You just have to taste…
…and if your hand is slowly crawling for another bite, and another one after – it is good. Oh, hell yeah, it is fucking good!
Our path on this Earth begins with food that we receive in our mother´s belly, later from her milk and then from her hands that feed us everyday till we are grown up ourselves and are capable of finding food independently.
Food is how we start to explore this world.
Food is how we explore it throughout a lifetime.
Food is what we become when we die.
Don´t get me wrong, I don´t want to end up citing the Lion´s King tirade about the circle of life right now, but…
I´ve just done exactly that.
Only because I could not say it better myself.
Only because if you ask me what is the purpose of this blog and whether I will ever get to the final point today, I will answer in a simple and clear way, feeling the firm ground underneath my feet – food is my passion.
I have been fighting this passion for so long.
Dieting experience as a teenager, studies that never brought me even 1/10 of the pleasure cooking brings me, fears and insecurities about my body, my abilities, my skills – all of that stopped me from actually doing what I really love.
I love food.
I love to cook it.
I love to see food transforming in my hands.
I love to think, that I am clear with it.
I love the deceptive security I have in the kitchen: if I mix this and that – I will definitely get this and that.
Most probably something else.
Or possibly something else.
Possibly something better.
Most probably worse.
..and only then I will explore, how acid balances salt, how salt balances acid, how bitter meets sweet, how spicy meets tender, how food reconstructs itself, how it flows, how it burns, how it ends finally.
Only then I will know, that nothing is ever under my control.
Only then I will learn the chemistry.
The astronomy and the astrology, because sometimes they are actually the ones to blame for the eleventh batch of macarons that went wrong.
The science of care. Is that even a science? I suppose yes, if you think about it.
The science of cooking.
The science of making food.
The science of feeding it to your loved ones and maybe to your enemies.
The science of finding that truly good in yourself, that is better than hatred, bigger than evil, because let´s face it, you can´t bring those to your kitchen.
The science of appreciating something more than yourself.
The science of sacrifice, when your hands are frozen or burnt, overall covered in patches, when your feet hurt and its already the third sleepless night you spend near the oven.
The science of love, because let´s face it, it is the only thing you are allowed to have extra in your kitchen.
Only that will bring me at least one step closer to understanding of what life actually is.
